Chicken Oyster is also known as "Sot-l'y-laisse [so.li.lɛs]." It's the two small pieces of meat attached to a bird on either side of the backbone. It has the cleanness of the breast as well as the flavour of thigh. In French, "Sot-l'y-laisse" means "the fool leaves it there," as unskilled carvers sometimes leave it on the skeleton.
