Created through the prideful partnership of ten companies that trace their history to the Edo period in Ishikawa prefecture, this is a miso that is made through traditional methods.
This miso is made of soy beans, salt, and rice kōji, and unlike other miso, is made using our own natural yeast strain, which produces the perfect combination of umami, depth, taste, and fragrance. This natural yeast is cultivated in-house, and real-time feedback technology is used to maintain its high quality. It is our goal to learn from our past experiences to continuosly adapt to the needs of our customers in the changing eras to come.
